Braised Swordfish in Galangal Sauce


– 3 tbs oil
– 6 swordfish steaks
– 1 1/2″ fresh galangal root, peeled and julienned
– 2 tbs fish sauce
– 1 tbs caramel syrup
– 1/2 cup water


– Heat oil in wok over medium heat and stir-fry galangal until golden, about 2 minutes or so.
– Add fish and pan-fry for 3 minutes each side.
– Add fish sauce, syrup, and water.
– Braise fish uncovered for about 5 minutes, or until cooked.
– Remove from heat and arrange on a serving platter.
– Serve hot.
