Vietnamese Shrimp and Green Mango Salad


– 12 fresh shrimp
– 1 small carrot, grated
– 1 green mango, cut into sticks
– 1 tbs minced Vietnamese mint
– 1/4 cup Fish Sauce Dip
– 1 red chili, seeded and minced
– 2 tbs fried shallots
– 1 bunch Asian chives, chopped


– Steam shrimp, then peel and devein.
– Combine with next 4 ingredients and mix well.
– Transfer to a serving platter and top with remaining ingredients.
– Serve immediately.
